Easy Southwest Chicken Casserole

1/2 Rotisserie Chicken

3 oz. Cream Cheese

3 oz. Cheddar Cheese

3 tbsp. Mayonnaise

1 tbsp. Two Snooty Chefs Southwest Sedona (Also on Amazon)

3 oz. Cauliflower
-
2 medium Jalapeno Peppers

1/2 medium Green Pepper

2 tbsp. Parmesan Cheese

Salt and Pepper to Taste
- Shred rotisserie chicken and mix together with cream cheese, half of the cheddar cheese, mayonnaise, and Southwest Sedona spices.
- Pre-heat oven to 350F. In a food processor, add coarsely chopped cauliflower, de-seeded jalapeno peppers, and green pepper.
- Pulse in the food processor until everything is chopped well. Mix all of the vegetables in with the chicken.
- Press chicken mixture into a small baking dish, then top with the remaining cheddar cheese and parmesan cheese.
- Bake for 25 minutes, then broil for an additional 2-4 minutes or until crust is golden brown.
