- 1 Package Good Dee's Coconut Snack Cake Mix
- 4 Large eggs
- 1/3 Cup coconut oil (melted)
- 1 Tbsp lime zest (2 limes)
- 1 Tbsp lime juice
- 16 Ounces cream cheese (softened)
- 2 Tbsp butter (softened)
- 6 Oz fresh raspberries
- 3 Tbsp whipping cream
- 1 Teaspoon vanilla extract
- ¼ Teaspoon Truly Zero Monkfruit Sweetener
- Follow directions on Good Dee’s Coconut Snack Cake (omit vanilla).
- Add lime and lime zest. Stir until combined.
- Portion into 12 equal portions in lined cupcake tray.
- Bake for 25 minutes. Remove from oven and allow to cool completely before frosting.
- In a large bowl, whip together cream cheese and butter using an electric mixer.
- Blend in sweetener, raspberries, heavy cream, and vanilla.
- Frost cupcakes and enjoy!
