Coconut Lime Cupcakes with Raspberry Cream Cheese Frosting

  1. Follow directions on Good Dee’s Coconut Snack Cake (omit vanilla).
  2. Add lime and lime zest. Stir until combined.
  3. Portion into 12 equal portions in lined cupcake tray.
  4. Bake for 25 minutes. Remove from oven and allow to cool completely before frosting.
  5. In a large bowl, whip together cream cheese and butter using an electric mixer.
  6. Blend in sweetener, raspberries, heavy cream, and vanilla.
  7. Frost cupcakes and enjoy!
