Southwestern Queso Guacamole
- Guacamole

2 medium Avocados

2 tbsp. Cilantro, chopped

3 tbsp. Tomatoes & Green Chile, canned

2 tbsp. Isabel Serrano, Cilantro & Lime

Salt and Pepper to Taste
- Queso Sauce

3 oz. Pepperjack Cheese, shredded

4 tbsp. cup Heavy Cream
-
1/2 tsp. Ground Cumin

1 medium Jalapeno, chopped

1/4 medium Red Bell Pepper, chopped
- Slice the avocados in half and take the pitts out. Slice each half lengthwise and widthwise. Scoop out all of the meat.
- Add the rest of the ingredients and mix together, slightly mashing some of the pieces of avocados.
- On the stovetop, combine all queso ingredients over medium-low heat, sirring frequently.
- When queso sauce is completely melted and gooey, add to guacamole and mix together.
- Serve with fried low-carb flax tortillas or pork rinds!
