Southwestern Queso Guacamole

  • Guacamole
  • 2 medium Avocados
  • 2 tbsp. Cilantro, chopped
  • 3 tbsp. Tomatoes & Green Chile, canned
  • 2 tbsp. Isabel Serrano, Cilantro & Lime
  • Salt and Pepper to Taste
  • Queso Sauce
  • 3 oz. Pepperjack Cheese, shredded
  • 4 tbsp. cup Heavy Cream
  • 1/2 tsp. Ground Cumin
  • 1 medium Jalapeno, chopped
  • 1/4 medium Red Bell Pepper, chopped
  1. Slice the avocados in half and take the pitts out. Slice each half lengthwise and widthwise. Scoop out all of the meat.
  2. Add the rest of the ingredients and mix together, slightly mashing some of the pieces of avocados.
  3. On the stovetop, combine all queso ingredients over medium-low heat, sirring frequently.
  4. When queso sauce is completely melted and gooey, add to guacamole and mix together.
  5. Serve with fried low-carb flax tortillas or pork rinds!
