Bacon Eggs Benedict

  • Mug Cake
  • 3 tbsp. Almond Flour
  • 2 tbsp. Butter
  • 1 large Egg
  • 1/2 tsp. Baking Powder
  • 1/4 tsp. Chili Powder
  • 1/4 tsp. Onion Powder
  • Salt and Pepper to Taste
  • Toppings
  • 4 slices Bacon
  • 2 large Eggs
  • 2 tbsp. Trader Joe's Hollandaise Sauce
  • Salt and Pepper to Taste
  1. Add mug cake ingredients to a mug (or round dish) and mix together. Microwave for 1 minute 30 seconds, or until puffed and cooked through.
  2. Lightly tap mug upside down to dislodge cake.
  3. Slice in half and set aside.
  4. Cook bacon in a pan over medium heat until cooked through.
  5. While bacon is cooking, poach 2 eggs.
  6. Once bacon and eggs are cooked, assemble by placing 2 slices bacon and 1 poached egg on top of each half of the mug cake.
  7. Place 1 tbsp. Hollandaise Sauce over each egg
