Chicken Bacon Ranch Casserole

  • 4 medium Jalapeno Peppers (+1 for topping)
  • 3 oz. Cheddar Cheese
  • 1/2 Rotisserie Chicken (breast/thigh/drumstick)
  • 1/4 cup Ranch Dressing
  • 10 slices Bacon
  • 3 oz. Cream Cheese
  • 1/2 medium Green Pepper
  • 1 cup Crumbled Cauliflower
  • 1 tsp. Red Pepper Flakes
  • 1/2 tsp. Onion powder
  • 1/4 tsp. Garlic Powder
  • Salt and Pepper to Taste
  1. Preheat oven to 375F. Chop bacon, chicken, green pepper, and 4 jalapenos.
  2. In a pan, cook bacon until crisp, then add cauliflower, green pepper, and jalapenos.
  3. Stir occasionally.
  4. Once soft, add all other ingredients (except cheddar cheese) and mix together well.
  5. Spread mixture on the bottom of a 9x13 casserole dish. Grate cheddar cheese and sprinkle over top.
  6. Slice last jalapeno and lay over the top.
  7. Bake for 15 mins, or until cheddar is melted and starting to crisp.
