Zucchini Poppers

  • 4 oz. Cream Cheese
  • 1/4 cup Mozzarella Cheese
  • 4 small Zucchinis (~10 oz.)
  • 1/4 tsp. Salt
  • 1/4 tsp. Pepper
  • 8 slices Bacon
  1. Preheat oven to 400F.
  2. Slice all zucchinis in half lengthwise and horizontally. Use a spoon to scrape out seeds and pulp. You will have 8 zucchini "boats."
  3. Mix cream cheese, mozzarella cheese, salt and pepper. Pack cream cheese mixture into zucchini boats.
  4. Cut bacon slices in half. Wrap each zucchini boat in a half-slice of bacon with seam on bottom.
  5. Bake for 20-25 minutes, then broil for an additional 2-3 minutes.
