Spicy Thai Peanut Butter Cookies

  • 1/2 cup Eliots Adult Spicy Thai
  • 1/4 cup Erythritol
  • 1/2 cup Almond Flour
  • 1/4 cup Flaxseed Meal
  • 1/4 cup Salted Butter
  • 1 large Egg
  • 1 tsp. Baking Powder
  • 1/2 tsp. Vanilla Extract
  • 10 drops Liquid Stevia
  1. Preheat oven to 350F. Mix together all ingredients in a bowl.
  2. Prepare a baking sheet with parchment paper or a silpat on top.
  3. Using a tablespoon measuring spoon, scoop a heaped spoonful of dough and place on cookie sheet. Repeat until you have 16 cookies.
  4. Press dough down with back of measuring spoon until semi flat.
  5. Bake for 12-15 minutes or until cookies look browned on the edges.
