Pumpkin Pie Spice Waffles with Walnut Glaze

  • Pumpkin Spice Waffles
  • 3 large Eggs
  • 2 tbsp. Flaxseed Meal
  • 4 tbsp. Almond Flour
  • 2 tbsp. Butter
  • 2 tbsp. Erythritol
  • 10 drops Liquid Stevia
  • 1 tsp. Baking Powder
  • 3/4 tsp. Pumpkin Pie Spice
  • Walnut Glaze
  • 3 tbsp. Life of Riley Walnut Butter
  • 4 tbsp. Heavy Cream
  • 12 drops Liquid Stevia
  • Toppings
  • 4 tbsp. Heavy Cream
  • 2 oz. Raspberries
  • 3 drops Liquid Stevia
  1. Combine all ingredients for the waffles in a bowl. Using a blender or immersion blender, mix together well.
  2. Heat waffle iron and pour half the mixture into the waffle iron. Let cook until browned on both sides.
  3. Remove waffle from the waffle iron and repeat process with the rest of the batter.
  4. In a small bowl, combine all of the glaze ingredients. Mix together well using a fork.
  5. In a mug or another small bowl, beat whipped cream and stevia until fluffy and soft peaks form.
  6. Split waffles in half and serve with whipped cream, raspberries, and walnut glaze.
