Easy Southwest Chicken Casserole

  • 1/2 Rotisserie Chicken
  • 3 oz. Cream Cheese
  • 3 oz. Cheddar Cheese
  • 3 tbsp. Mayonnaise
  • 1 tbsp. Two Snooty Chefs Southwest Sedona
  • 3 oz. Cauliflower
  • 2 medium Jalapeno Peppers
  • 1/2 medium Green Pepper
  • 2 tbsp. Parmesan Cheese
  • Salt and Pepper to Taste
  1. Shred rotisserie chicken and mix together with cream cheese, half of the cheddar cheese, mayonnaise, and Southwest Sedona spices.
  2. Pre-heat oven to 350F. In a food processor, add coarsely chopped cauliflower, de-seeded jalapeno peppers, and green pepper.
  3. Pulse in the food processor until everything is chopped well. Mix all of the vegetables in with the chicken.
  4. Press chicken mixture into a small baking dish, then top with the remaining cheddar cheese and parmesan cheese.
  5. Bake for 25 minutes, then broil for an additional 2-4 minutes or until crust is golden brown.
