Pumpkin Spice Walnut Muffins

  • 1 cup Almond Flour
  • 1/4 cup Flaxseed Meal
  • 1/3 cup Erythritol, powdered
  • 1/3 cup Walnut Butter
  • 1/2 cup Heavy Cream
  • 1/3 cup Salted Butter
  • 2 large Eggs
  • 1 tsp. Baking Powder
  • 1 tsp. Pumpkin Pie Spice
  1. Pre-heat oven to 350F.
  2. In a spice grinder, grind erythritol into a powder.
  3. Combine all ingredients in a bowl and use a hand mixture to blend together well.
  4. Divide mixture into silicone muffin molds or a lined cupcake tray.
  5. Bake for 20 minutes or until tops are golden brown. Remove from the oven and let cool.
