Coffee Mug Cake

  • 1 Egg
  • 2 tbsp. Almond Flour
  • 1 tsp. Coffee Extract
  • 1/4 tsp. Cinnamon
  • 3 tbsp. of Strong Brewed Coffee, cooled
  • 1/2 tsp. Maple Extract
  • 1 tbsp. Pecans, chopped
  • Pinch of Salt
  1. Whisk all muffin ingredients together well. Grease small microwave safe bowl with MCT oil or any kind of keto friendly oil.
  2. Pour batter into dish. Microwave for 1 minute and 30 seconds.
  3. May need 40 seconds more depending on microwave.
  4. Just mix together ingredients, taste, and change sweetness to taste. Add chopped pecans
