- 1 carton Kettle and Fire Mushroom Chicken Bone Broth (480 mL) (Also on Amazon)
- 1/3 medium Red Onion, thinly sliced (75g)
- 1/2 tsp minced Garlic (2g)
- 1/3 cup Red Wine (70 mL)
- 1/2 cup Moon Cheese Gouda (Also on Amazon)
- 2/3 cup Shredded Gruyere Cheese (85g)
- 1/2 tsp Pepper
- 1/4 tsp Salt
- Melt butter in saucepan over medium heat. Add onion, garlic, salt, pepper, and saute until onion starts to brown.
- Add wine and cook for 2-3 minutes, scraping any bits off bottom of pan.
- Add bone broth and turn stove to low. Simmer uncovered for 5 minutes.
- Ladle soup into oven-safe bowls. Top with Moon Cheese Gouda and then sprinkle gruyere on top of Moon Cheese.
- Place under broiler until gruyere is brown and bubbly (approximately 5 minutes).
