- 4 packs Fat Snax Peanut Butter Cookies (Also on Amazon) (8 cookies)
- 2/3 c Heavy Whipping Cream
- 2 1/2 tbsp Xylitol
- 3 drops liquid Sucralose or 5 drops liquid Stevia/Monkfruit
- 1/16 tsp Xanthan Gum
- 1/16 tsp Guar Gum
- 4 tbsp Nature's Hollow Strawberry Jam (Also on Amazon)
- In a medium bowl or blender, combine all ingredients except cookies and jam.
- Using hand mixer, electric whisk, or blender on low, mix until stiff peaks form.
- Add jam and mix until combined.
- On baking tray or plate, arrange four bottom cookies.
- Spoon heaping portion of cream onto each bottom cookie and gently cover with a top cookie.
- Freeze for 20-30 minutes.
