Peanut Butter Coffee Protein Cookies

  • 2 large Eggs
  • 2 tsp. Vanilla Extract
  • 1/2 cup Almond Flour
  • 3 tbsp. Butter, melted
  • 4 tbsp. Almond Butter
  • 1 packet Keto and Co. Coffee Protein
  • 1 tsp. Instant Espresso
  • 30 drops of Liquid stevia
  1. Preheat the oven to 350F.
  2. In a medium bowl, combine all of the ingredients.
  3. Mix well with a fork until the ingredients are well-combined and resembles dough.
  4. Use clean hands to form small, 1-inch balls of dough.
  5. Place the balls of dough on a silpat or parchment paper, then flatten using your hand or a fork.
  6. Bake the cookies for 10-12 minutes, or until the bottoms are just beginning to turn golden brown.
  7. Remove the baking sheet from the oven and let the cookies cool on the pan for at least ten minutes.
