Pumpkin Spice Keto Cheesecake

  1. Preheat oven to 350 degrees. Grease 9" pie
  2. Stir all crust ingredients together. The dough will be crumbly.
  3. Press the dough into the bottom of the prepared pan. Bake 10-12 minutes, until just golden. Remove from oven and let cool at least 10 minutes
  4. Meanwhile, beat the cream cheese, erythritol, and sucralose together until fluffy. Beat in the eggs. Finally, beat in the Simply Beyond Spray-On Spice, lemon juice, vanilla extract and salt
  5. Pour filling into pan over crust and smooth with a spatula
  6. Bake 45-55 minutes, until center is almost set but still jiggly
  7. Remove the cheesecake from the oven and cool in the pan to room temperature
  8. Refrigerate for at least 4 hours, until completely set
