Tequila Lime Poblano Chicken Casserole

  • One bag frozen Cauliflower Florets (450g)
  • 1/3 cup Cream Cheese, softened (80g)
  • 2 cups Cooked Chicken, shredded (200g)
  • 1/4 cup Sinai Gourmet Poblano Hot Sauce (50g)
  • 1 cup Shredded Sharp Cheddar Cheese (60g)
  • 1/4 cup Sour Cream (50g)
  • 1 tbsp Lime Juice
  • 1/2 tsp Kosher Salt & 1/2 tsp Pepper
  • 1 tbsp Chopped Cilantro (optional)
  • 1 tbsp Tequila (optional)
  1. Preheat oven to 375 degrees
  2. Place cauliflower in bowl and defrost in microwave
  3. Add cream cheese to bowl w/ cauliflower
  4. Microwave 30 seconds more then stir
  5. Add chicken, cheddar cheese, Poblano Hot Sauce, sour cream, lime juice, salt, pepper, cilantro, and tequila to bowl; Stir to combine
  6. Spoon mixture into lightly greased casserole dish
  7. Bake 25 minutes
  8. Let cool before serving and enjoy!
