- 1 Egg
- 2 tbsp. Almond Flour
- 1 tsp. Coffee Extract (Get it: Amazon)
- 1/4 tsp. Cinnamon
- 3 tbsp. of Strong Brewed Coffee, cooled
- 1/2 tsp. Maple Extract (Get it: Amazon)
- 1 tbsp. Pecans, chopped
- Pinch of Salt
- Whisk all muffin ingredients together well. Grease small microwave safe bowl with MCT oil or any kind of keto friendly oil.
- Pour batter into dish. Microwave for 1 minute and 30 seconds.
- May need 40 seconds more depending on microwave.
- Add chopped pecans.
