Cocoa Rubbed St. Louis Ribs over Vanilla Macadamia Cauli Rice

    Rib Ingredients
  • 1/2 cup Nature's Kitchen Cocoa Rub (45g)
  • 1 Rack Bone-in St. Louis Ribs (4lbs)
  • Rice Ingredients
  • 2 cups Milkadamia, Unsweetened Vanilla
  • 3/4 cup Keto and Co Dry Riced Cauliflower (80 g)* (Also on Amazon)
  • 2 tbsp Olive Oil
  • 1 tsp Soy Sauce + 1 tsp Sesame Oil
  • 2 Stalks of Scallion, chopped (10g)
  • 1/2 tsp Salt
    1. Preheat oven to 250 degrees
    2. Clean Ribs (removing under membrane)
    3. Rub ribs on both sides generously with Cocoa Rub
    4. Place on foil-lined baking sheet. Cover ribs with foil.
    5. Cook for 3 hours at 250 degrees
    6. Increase temperature to 375. Remove foil and cook another 30 minutes
      1. In medium pan, add cauli rice, Milkadamia, olive oil and salt. Cook for 15 minutes or until liquid absorbed
      2. Remove from heat, stir in soy sauce an sesame oil
      3. Garnish with scallions
