Cocoa Rubbed St. Louis Ribs over Vanilla Macadamia Cauli Rice
Rib Ingredients

1/2 cup Nature's Kitchen Cocoa Rub (45g)

1 Rack Bone-in St. Louis Ribs (4lbs)
Rice Ingredients

2 cups Milkadamia, Unsweetened Vanilla

3/4 cup Keto and Co Dry Riced Cauliflower (80 g)* (Also on Amazon)

2 tbsp Olive Oil
-
1 tsp Soy Sauce + 1 tsp Sesame Oil

2 Stalks of Scallion, chopped (10g)

1/2 tsp Salt
- Preheat oven to 250 degrees
- Clean Ribs (removing under membrane)
- Rub ribs on both sides generously with Cocoa Rub
- Place on foil-lined baking sheet. Cover ribs with foil.
- Cook for 3 hours at 250 degrees
- Increase temperature to 375. Remove foil and cook another 30 minutes
- In medium pan, add cauli rice, Milkadamia, olive oil and salt. Cook for 15 minutes or until liquid absorbed
- Remove from heat, stir in soy sauce an sesame oil
- Garnish with scallions
